This tropical sundae reminds us of sunny afternoons relaxing by the pool. We will definitely be enjoying a few of these with our whanau this summer in Maketu.
Sauce
| ½ cup | Brown sugar |
| ¼ cup | Water |
| ¼ cup | Lime juice |
| 25 g | Butter |
| 2 pieces | Crystalised ginger, chopped |
Sundae
| 1 | Mango, chopped (Main) |
| ¼ cup | Pineapples, chopped (Main) |
| 2 servings | Vanilla ice cream (Main) |
| 1 sprinkle | Toasted coconut |
Directions
- In a saucepan, combine the sugar, water, lime juice, butter and ginger, and heat until everything has combined and reduced slightly, set aside.
- To make the sundae, layer the fruit, icecream and spoon over the sauce in a sundae glass. Top with toasted coconut.
