- Wash tomatoes (preferably vine tomatoes) and cut into quarters. Wash snow peas and cut in half, horizontally. Place tomatoes and snow peas on a serving platter and scatter over torn basil leaves. Drizzle with chilli dressing.
- To make the dressing: Cut chilli in half. Remove seeds and chop flesh finely. Crush garlic, peel and chop finely. Mix chilli, garlic, coriander, sugar, salt, pepper, lemon juice and oil together.
