Have been making this for years and is a favourite with friends and family. Great with a ploughmans platter, in sandwiches or with meat
Ingredients
| 2 kgs | Tomatoes, chopped (Main) |
| 1 kg | Brown onion, diced |
| 750 g | Sugar |
| 3 cans | White vinegar |
| 2 Tbsp | Curry powder |
| 1 Tbsp | Mustard powder |
| 6 Tbsp | Cornflour, gluten free |
Directions
- Prepare approx 8 x 500g jars ( I always prepare extra jars just in case )
- Add all ingredients except cornflour to pot and boil stirring occasionally for 1hr, mix cornflour with water or extra vinegar to make a slurry, slowly stir cornflour mixture into relish and boil for five more minutes. Depending on the consistency you may want to add more or less cornflour.
- Pour into sterilised jars and cover
