How simple is this? A good way to use up the last of the tomato crop. You could use canned tomatoes but I think fresh is best in this case.
Ingredients
450 g | Tomatoes, cut in half horizontally, seeds squeezed out and coarsely chopped (Main) |
1 Ltr | Chicken stock, or use vegetable stock |
3 Tbsp | Fresh ginger, coarsely chopped and peeled |
2 Tbsp | Hoisin sauce, or use black bean sauce |
2 tsp | Caster sugar |
Directions
- Bring the stock to a simmer in a saucepan.
- Add all the other ingredients and simmer for 2 more minutes.
- Spike this with a little chopped red chilli if you like things hot.
- Serve with a squeeze of lemon to sharpen the taste.
