- Heat oven to 180°C. Lightly grease a baking dish with oil. Run a sharp knife around the middle of each (cooking) apple - this allows the apple to expand and not explode as it bakes. Place apples in prepared dish.
- Combine chopped marshmallows, raisins and shredded coconut in a bowl. Place a cinnamon stick in the centre of each apple where the core was removed and pack marshmallow mixture around the cinnamon stick to fill cavity.
- Drizzle filling with a little apple syrup. Bake for 30 minutes or until golden brown. Serve drizzled with extra apple syrup and with cream or yoghurt on the side, if desired.
