This is a popular seafood sandwich made with shrimps or prawns, mayonnaise and dill and served on fried toast. It is served in many restaurants as an entrée. It is named after a Danish fishing port called Skagen.
Ingredients
| 4 | Toast bread slices |
| 300 g | Shrimps, or prawns (Main) |
| 5 Tbsp | Mayonnaise |
| 1 Tbsp | Dijon mustard |
| 1 Tbsp | Fresh dill, chopped |
| 1 to taste | Salt & freshly ground pepper |
| 4 tsp | Salmon caviar |
| 1 | Lemon, quartered |
Directions
- Fry 4 slices of toast using good quality white bread with the crusts removed.
- Poach 300g of shrimp or prawns. Drain and cool. Cut the prawns into smaller pieces if they are large.
- Mix 5 Tbsp of mayo, 1 Tbsp of Dijon mustard, some chopped dill, salt and pepper. Fold in the seafood.
- Spoon the mixture on to the top of the bread slices, garnish with a sprig of dill. Top with a good teaspoon of salmon caviar, and serve with a lemon quarter.
