Migonette sauce
| ½ | Red onions, finely chopped |
| 3 Tbsp | Red wine vinegar |
| 1 | Lemon, freshly zested and juiced |
| 1 Tbsp | Mirin |
| 1 tsp | Fresh ginger, grated |
| 1 | Kaffir lime leaf, finely chopped, optional |
Directions
To make a mignonette sauce to serve alongside freshly shucked oysters, combine the onion with the red wine vinegar, lemon zest and juice, mirin, ginger and the chopped kaffir
