This is so versatile, will liven up any dish. Add lime juice and fish sauce and you have a great Thai dressing
Ingredients
1 head | Garlic, peeled |
250 g | Red chillies, roughly chopped (Main) |
200 g | Fresh ginger, peeled and roughly chopped |
2 leaves | Kaffir lime leaves, shredded |
6 | Limes, zest and juice only |
2 ½ cups | Sugar |
½ cup | White vinegar |
3 Tbsp | Fish sauce, gluten free |
1 Tbsp | Tamari sauce, gluten free |
Directions
- Prepare jars and lids (makes approx 4 x 250g jars, always prepare more jars than you think you will use)
- Put Garlic, Chilli, Ginger and Kaffir leaves in food processor and process till fine, transfer to pot, add remaining ingredients and boil until it is at jam consistency.
- Pour into sterlised jars and cover
