A tasty high protein meal for the whole family bringing people together and the leftovers can be enjoyed cold with salad or reheated the next day. Simple yet delicious.
Ingredients

3 cloves | Garlic, sliced |
4 Tbsp | Tamari |
1 | Garlic bulb |
1 | Fresh rosemary |
2 tsp | Manuka honey |
15 | Cherry tomatoes |
2 tsp | Wholegrain mustard |
Directions
- Preheat oven to 195c
- make small slices in the meat allowing enough to push slices of garlic in
- for the sauce mix the mustard, tamari and honey in a large cup and put in some boiling water
- put the lamb in a roasting dish on some of the rosemary then pour the mustard, tamari and honey sauce on it
- Place vine cherry tomatoes and the garlic bulb next to the lamb - the tomatoes add flavour to the sauce
- Put on top the rest of the fresh rosemary on the lamb
- roast in the oven - basting it every so often - I do every 20 minutes or so
- I allow 50 minutes per kilogram of lamb for cooking
- add another half to one cup of boiling water to the bottom of the roasting dish half way through the lamb cooking to make a richer sauce
- I stand the lamb for a while then serve it with fresh vegetables and kumara and pumpkin
