|1 kg||Red capsicum, include fresh chillies with the capsicums according to taste, all seeded and chopped (a food processor makes this quick) (Main)|
|4 cloves||Fresh garlic, chopped (use more or less to taste) and include a finely chopped knob of ginger if you wish|
|3 ½ cups||White vinegar|
|1 cup||Jam-setting sugar|

Place all ingredients in a large saucepan and cook until
thick. Pour into hot sterilised bottles.
