No need to reinvent the wheel, if your kids have favourite sandwich fillings, use them. Just turn them into fun pinwheel wraps instead of sandwiches for a change.
Directions
- For our sandwich "sushi" rolls we spread a thin layer of fresh ricotta on a sheet of mountain cornbread, then topped with a sheet of nori.
- Spread more ricotta across half the nori then lay carrot, cucumber, ham and pineapple (all cut into long sticks) across the middle of the ricotta.
- Roll up and cut to fit.
