Ingredients
| 1 splash | Sesame oil |
| 1 | Baby leek, thinly sliced, alternatively use 1 spring onion |
| 2 cloves | Crushed garlic |
| 1 | Red chilli, choose a mild one, cut into thin threads |
| 1 small knob | Ginger, peeled and cut into thin threads |
| 1 cup | Cooked rice (Main) |
| 1 | Baby cos lettuce, use 2 cos if you like, shredded (Main) |
| 1 handful | Cooked prawn (Main) |
| 1 Tbsp | Hoisin sauce |
| 1 tsp | Fish sauce |
| 1 squeeze | Lemon juice |
| 1 handful | Coriander leaves |
Directions
- Heat a splash of sesame oil in a hot wok. Add thinly sliced baby leek (or spring onion), crushed garlic, chilli and ginger and fry gently to soften leek. Add rice, a splash more oil and fry to just heat rice through.
- Add cos, cooked prawns, hoisin sauce, fish sauce and lemon juice. Stir-fry to wilt lettuce, toss through coriander leaves, season with freshly ground black pepper and serve as a side or light meal.
