Its nutritious, delicious and just soooooooooo good :) A nice filling salad is really all you need on a springy evening :) You can always add chicken to this but we like to have it meat free as it is always useful and good to have a meat free delicious recipe on hand :) It is special to me and my partner as this was the 1st thing i made him before we became a couple :) This with a lovely bottle of wine and a fresh fruit platter for desert gives you loads of energy and makes you feel happy and healthy :)
Cook the bulghar wheat according to packet instructions. Put aside to cool. Pan fry chickpeas with a dash of olive oil = just to give them a little colour and crisp. Add pine nuts to the pan and lightly toast for only a few minutes (as they burn easily) So just untill golden :) Put those aside in dish. lightly batter courgette flowers with just a simple tempura batter and deep fry them just untill golden :) Put them aside :)
Put all the salad ingredients into a bowl and toss together well. Add a dash of salt and pepper (but NOT too much as most people like to season their own things they way they like) Sprinkle Paprika :) Set up cos lettuce on a plate like a pretty flower = 5 lettuce leaves on each plate, add ingredients into the middle and then put sliced advocado and red peppers on the side and a sprinkle of fresh corriander, walnuts and croutons on top of salad = WALLA :) DELISH :)
On the dinner table always have a little pouring dish with extra olive oil and balsamic to give your dinner guests options of flavours :)
