Ingredients
| 1 large bunch | Spinach leaves (Main) |
| 4 | Medjool dates, pitted, sliced lengthways (Main) |
| 1 | Carrot, grated |
Parsley dressing
| 1 cup | Coconut water |
| 2 | Garlic cloves |
| 1 cup | Pine nuts |
| 1 bunch | Italian parsley (Main) |
| 1 tsp | Salt |
| 1 tsp | Lemon juice |
Directions
- To assemble the salad place all the ingredients in a bowl.
- Place all the dressing ingredients in your blender and process until smooth.
- Dress the salad with the dressing.
