Choy sum is one of the most common Asian vegetables, with its distinctive yellow buds and yellowy-green leaves. You can substitute choy sum in recipes using gai larn.
Ingredients
| 1 Tbsp | Vegetable oil |
| 250 g | Dried flat rice noodles (Main) |
| 1 | Red chilli, chopped |
| 1 Tbsp | Fresh ginger, shredded |
| 2 Tbsp | Soy sauce |
| ½ cup | Chicken stock |
| 1 kg | Choy sum, chopped (Main) |
| ½ cup | Mint leaves, to serve |
Directions
- Cook rice noodles in a saucepan of boiling water for 6-8 minutes or until tender. Drain and set aside. Heat the oil in a frying pan or wok over high heat.
- Add the chilli and ginger and cook for 1 minute. Add the noodles, stock and soy sauce and cook for 1-2 minutes. Add the choy sum and cook for a further 1-2 minutes or until choy sum is tender.
- Serve topped with mint.
TIPYou can also use fresh rice noodles, available in the refrigerated section from Asian grocers and selected supermarkets.
