Ingredients
250 g
Caster sugar
250 ml
Vegetable oil

Eggs

Plain flour
1 Tbsp
Ground cinnamon
5 g
Bicarbonate soda
10 g
Baking powder
1 pinch
Salt

Braeburn apples, or another similar apple, grated with the skin on (Main)
1 large
Apple, peeled and roughly diced (Main)
Directions
Line a muffin tray with muffin cases and pre-heat the oven to 210C.
Using the whisk attachment on the mixer, mix together the caster sugar, oil and eggs until the sugar is dissolved. Then add the flour, cinnamon powder, bicarbonate of soda and baking powder. Mix gently until combined.
Remove the mixture from the mixer and fold through the grated and diced apple.
Fill the muffin cases with the mixture and bake for around 14 minutes.
Cool for a few minutes in the pan before removing from the tray.
