It's healthy and perfect to be served with any meal quick & easy
Ingredients
| 8 pieces | Sliced ham |
| 4 servings | Chopped tomatoes (Main) |
| 1 cup | Canned sliced pineapple |
| ½ cup | Fresh coriander |
| 3 cups | Cooked rice (Main) |
| ½ tsp | Lemon juice |
| 1 serving | Salt and freshly ground black pepper, optional |
| 8 packets | Tortilla shells |
| 1 serving | Spring onion, finely chopped |
| 2 Tbsp | Cooking oil |
Directions
- Place Pineapple , coriander, spring onion and lemon juice in a small bowl. Mix well.
- Heat oil in frying pan on high heat and put in Tortillas in for 30 seconds on each side one at a time.
- To serve, place two Tortillas on a plate, combine and add everything else plus rice.
- Ganish with grated cheese
- Add Cooked Rice
