This is a special dish that my Dad loves. I always cook it when he comes over and on special occasions
Ingredients
| ½ cup | Cornmeal, or polenta |
| ¼ cup | Standard flour |
| 1 Tbsp | Fresh rosemary, chopped |
| 4 | Beef scotch fillets (Main) |
| 1 | Egg, beaten |
| 2 Tbsp | Extra virgin olive oil |
| 1 serving | Enoki mushrooms |
| 1 serving | Fresh herbs, to garnish mushrooms, optional |
Directions
- Combine cornmeal, flour, herbs and salt and pepper. Dip steaks in egg then coat with cornmeal mixture. Fry in oil until cooked to preferred degree.
- Serve with sauce and optional garnish.
- Sauce. Briefly fry 16 brown button mushrooms and 1 clove crushed garlic in 2 tablespoons of butter. Add 1/2 cup onion jam and 1/2 cup cider (or beer). Simmer until mushrooms are tender.
