This no-pastry pie is a complete nutritious meal. Any type of sausage can be used and frying them first will give a better richer flavour. Serve with buttered bread and some salad greens.
|4 Tbsp||Rice bran oil|
|4||Sausages, or frankfurters (Main)|
|½ cup||Onions, diced|
|1 tsp||Garlic, grated|
|1 ½ cups||Cheddar cheese, grated (Main)|
|2 Tbsp||Chopped fresh herbs, any combination of parsley, chives, rosemary, and thyme, or use 2 tsp of dried mixed herbs|
|½ cup||Self raising flour|

- Heat 2 tablespoons of oil in a large frying pan. Cook sausages until browned. Remove, cool and chop.
- Add remaining oil to the pan and cook onion gently without colour for 5 minutes. Add garlic and sausages.
- Whisk eggs, add courgette, 1 cup cheese, herbs, flour, and season. Spread evenly over sausages and onions.
- Sprinkle over the extra ½ cup of grated cheese then bake at 180C for 35-40 minutes.
