This delicious mid-week meal is made even more tasty with the addition of pesto and a side serving of chips.
Ingredients

500 g | Sausage meat (Main) |
¼ cup | Fresh parsley |
2 Tbsp | Olive oil |
4 | Tomatoes |
1 to taste | Salt & freshly ground pepper |
½ cup | Pesto (Main) |

- Place sausage meat, mixed spice and chopped fresh parsley in a bowl and stir to combine (it should not need salt and pepper). With damp hands, shape mixture into four oval patties.
- Heat a large non-stick frying pan over a medium heat. Add a film of oil to the pan, then add the sausage patties and cook for 3 to 4 minutes on each side until browned and cooked through.
- At the same time (in another pan if necessary), pan-fry the halved medium-sized tomatoes in a little oil for 2 minutes on each side. Season fried tomatoes with salt and pepper and serve with hot sausage patties, a dollop of pesto and chips on the side.
