Its a hearty breakfast treat with the goodness of oats with a salmon and tomato topping to start the day
Ingredients
1 cup | Rolled oats (Main) |
1 cup | Milk |
1 cup | Standard flour |
3 tsp | Baking powder |
2 Tbsp | Butter |
2 | Eggs |
3 tsp | Sugar |
1 pinch | Salt |
2 fillets | Boneless salmon fillets |
1 punnet | Yellow cherry tomatoes |

Directions
- Soak the oats in the milk for half an hour. Melt the butter and add to oats with the beaten eggs Mix the dry ingredients and add to the oat mixture until thick pikelet consistency Add more milk if required. Spoon into fairly hot omelette pan (makes 8 pancakes) or any size you prefer Keep warm
- Cup salmon into cubes and add to omelette pan and season with plenty pepper and set aside Raise the heat and add the cherry tomatoes
- Place 2 pancakes on each plate and top with the salmon and tomatoes
