It is very simple to prepare, looks attractive and appetising with the variety of colours and is very filling and hunger satisfying.

8 large | Butter, crumpets |
1 packet | Spreadable cream cheese |
2 whole | Avocados |
3 slices | Smoked salmon (Main) |

Directions
- Have all ingredients ready at the kitchen bench as this dish needs to be served quickly while the crumpets are warm. Slice the avocados thinly making sure you use the ripened yellow/green colour and that it is soft. Have the smoked salmon slices ready to fit on top of the crumpets immediately. Use only black caviare that will sprinkle easily.
- Toast the crumpets until golden brown using a four slice toaster if possible. Remove them from the toaster and quickly spread them thinly with butter and a good quality cream cheese. Place on top of these 2 to 3 slices of avocado making sure they are evenly spaced. On top of the avocado,place 3 or 4 generous slices of smoked salmon making sure you use only the bright pink pieces. Sprinkle the black caviare on top of the salmon but just enough for the colour contrast---don't overdo it! Using a very sharp knife,slice the crumpets into two halves (or quarters for more daintiness) and serve on a large platter in the middle of the table.
- This is a surprisingly filling dish or course and is ideal for lunch with soup or a snack after school. The beauty of it all is how delicious it looks with all the contrasting colours. Golden Brown crumpets, White cream cheese, Yellow/Green avocado, Pink smoked salmon and Black caviare !
