- Place salmon steaks in a baking dish and drizzle with lime juice. Bake at 180 degrees C for 20 minutes. Remove and allow to cool. Place baby spinach leaves in a bowl.
- Break salmon steaks into pieces, removing any skin and bones. Roll nori sheet up tightly and slice finely. Toss nori and salmon through spinach with ginger mirin dressing.
Ginger mirin dressing:
- Mix ginger, mustard, mirin, sesame oil, salt and sugar together.

Tip:Mirin is a Japanese condiment made from rice and distilled alcohol. It's used like vinegar but has a milder flavour. You can substitute with white vinegar but the flavour will be astringent.
