This is a simple rustic method.
Ingredients
| ¾ cup | Breadcrumbs, coarse, made from stale bread |
| 3 Tbsp | Water |
| 3 | Garlic cloves |
| ½ tsp | Sea salt |
| ½ tsp | Cayenne pepper |
| 3 Tbsp | Olive oil |
| 1 to serve | Bread |
Directions
- Pour the water over the bread crumbs in a bowl.
- Mash the garlic with the salt and cayenne in a mortar and pestle.
- Add the moist bread crumbs and mash into a garlic paste.
- Add the olive oil in a stream, stirring and mashing until very smooth.
- Serve with the bouillabaisse and offer thick slices of country-style bread.
