Ingredients
5 Tbsp | Ricotta cheese (Main) |
1 Tbsp | Honey |
1 | Lime, zest and juice |
1 | Avocado (Main) |
1 loaf | Sourdough bread, slices toasted |
1 | Papaya, fresh, or mango, or pineapple |
1 handful | Chopped nuts |
1 sprinkle | Coconut, grated |
Directions
- Mix ricotta cheese (I use Clevedon Valley Buffalo) with good honey and the zest and juice of a lime.
- To serve. toast sourdough and spread slices with the ricotta mix.
- Layer with slices of avocado and slices of fresh papaya, mango or pineapple.
- Top with toasted chopped nuts and freshly grated coconut.
