Reader recipe: Zucchini Slice

Looking forward to getting fresh zucchini. This recipe comes from my Aussie Mum Lorna from my host family in Australia when I was an exchange student and was a favourite with us all. I'm not sure where she got it from. It was a wonderful time in my life.

Ingredients

3	Zucchini, Grated (Main)
1 cup	Self raising flour
5	Eggs
½ cup	Extra virgin olive oil
¾ cup	Grated cheese
¼ tsp	Salt, t
1 sprinkle	Pepper

Directions

1. Mix all ingredients together and combine well Cook in greased tin at 190 for 30-40 minutes. Can add some chopped ham or bacon for the more carnivorous members of the family.
