This recipe is simple and absolutely delicious.
Ingredients
| 1 whole | Onions, Coarsely chopped |
| 1 Tbsp | Cumin seeds, Whole |
| 1 Tbsp | Fresh ginger, Minced |
| 1 ½ cups | Brown lentils, Dry |
| 1 kg | Chicken, Skinned pieces (Main) |
| 2 whole | Carrots, Large pieces |
| 3 ½ cups | Chicken stock |
| ½ tsp | Allspice, Ground |
| ½ tsp | Cinnamon, Ground |
| ½ cup | Raisins |
| 310 g | Spinach, Can use frozen or fresh |
| ¾ tsp | Salt |
| 1 cup | Rice, To serve |
| 3 cloves | Garlic |
Directions
- In pressure cooker heat some oil and brown onion and garlic lightly.
- Stir in cumin and ginger and saute for 1 min longer
- Add lentils, chicken, carrots, water, allspice, cinnamon and raisins, stir well.
- Lock lid in place and bring to pressure. Cook for 9 minutes. Release pressure.
- Stir in spinach and simmer for approx 2 minutes.
- Serve with rice on the side if desired.
