When you grow your own zucchini and can harvest them while they are still small and tender, make a raw zucchini salad. Here's a simple recipe. This recipe was inspired by The Silver Spoon, in which the zucchini slices are macerated with parmesan, oregano and olive oil before being moistened with tomato.
|6||Zucchini, freshly picked and thinly sliced (Main)|
|50 g||Parmesan cheese, shaved (Main)|
|1 pinch||Dried oregano|
|3 Tbsp||Olive oil|
|1 to taste||Salt & freshly ground pepper|
|2||Tomatoes, peeled and sliced|

- Mix all the ingredients (shave the parmesan cheese), except the tomato, and set aside for at least 30 minutes.
- Peel and sloce the tomatoes and add just before serving.
