Ingredients
| 3 | Quinces, peeled, cored and roughly chopped (Main) | 
| 2 | Granny Smith apples, peeled, cored and roughly chopped | 
| 7 | Feijoas, peeled and roughly chopped | 
| ¼ cup | Sugar | 
| 1 knob | Fresh ginger, bruised to release flavour | 
| ½ | Vanilla beans, split | 
| 1 | Star anise | 
| 1 | Cardamom pod | 
| 1 piece | Cinnamon stick | 
| ½ cup | Ginger ale | 
| 1 | Lemon, zest and juice | 
Directions
Simmer gently until sauce is thick and quinces are tender. Cool and remove spices.
