1. Heat oven to 160 degC fan bake. Spread the apricot halves out, cut-side up, in four shallow, ovenproof dishes, then surround them with the remaining juice.
2. Place rolled oats, coconut and nuts in a bowl. Heat honey and pour over dry ingredients, then stir well to coat with honey.
3. Sprinkle spoonfuls of crumble mixture over the apricots. Bake for 20 minutes or until top is golden brown. Dust with icing sugar and serve with yoghurt on the side.
