Pomegranate dressing

Pour into decorative bottles with a simple ribbon to make into this dressing into a special gift. It's delicious over chicken, couscous, or even icecream.

High in vitamin C, this pretty fruit is easy to deal with and is great sprinkled over a salad and fabulous with cheese. Cut in half like an orange and squeeze the pips and juice into a bowl. One fruit will yield approximately one cup of pips and juice.

Ingredients

2	Pomegranates, seeds and juice removed (Main)
1 cup	Sugar
½ cup	Pomegranate molasses (Main)
½ cup	Water
1 tsp	Dijon mustard
1	Orange, juice and zest
2 Tbsp	Red wine vinegar

Directions

1. Into a medium-sized pot place pomegranate seeds and juice. Add sugar, molasses, water, mustard, orange and vinegar.
2. Bring to the boil and simmer for 10 minutes, until seeds are completely soft.
3. Pour through a fine strainer and discard pips. Pour into clean, sterilised bottles and seal.
