This is a favorite with family and friends, versatile, great with lamb, sausages and chicken, or with a ploughmans lunch.
Ingredients
| 3 kgs | Plums, washed (Main) |
| 1 head | Garlic, peeled & chopped |
| 1 ½ kgs | Sugar |
| 2 Ltr | Cider vinegar |
| 2 tsp | Ground nutmeg |
| 2 tsp | Ground ginger |
| 2 tsp | Ground cloves |
| 3 tsp | Rock salt |
| 1 tsp | Chilli flakes, or ground chilli |
| 1 tsp | Cayenne pepper |
| 1 tsp | Freshly ground black pepper |

Directions
- Prepare approximately 8 x 500g jars and lids for bottling ( I always prepare more than I think I will use)
- Cool all ingredients in a large pot until tender, sieve to remove plum stones, pour into sterilised jars and cover. Best left for a few weeks before using, keep in a cool dark place, refrigerate after opening.
