This dairy-free smoothie uses fresh coconut milk which is sold now for drinking. Combined with fruit and coconut yoghurt, it makes a refreshing and nutritious breakfast or snack for later in the day.

|1 slice||Pineapple, cut into chunks (Main)|
|½||Lemons, zest and juice|
|1 sprinkle||Ginger, freshly grated|
|1 cup||Coconut yoghurt (Main)|
|½ cup||Coconut milk, use up to 1 cup (Main)|

- Blend frozen banana and fresh pineapple, the lemon zest and juice, freshly grated ginger, coconut yoghurt and coconut milk until smooth and pour into a cold tall glass or divide it between 2 glasses.
