Gorgeous BBQ version of an American Classic, with a blue cheese twist.... Need I say more....
Ingredients
1 loaf | Ciabatta bread |
400 g | Beef |
1 medium | Yellow capsicum, sliced |
1 medium | Brown onion, sliced |
1 small | Red onion, finely sliced |
1 pinch | Salt & freshly ground pepper |
1 drizzle | Whole egg mayonnaise |
2 cloves | Crushed garlic |
1 drizzle | Olive oil |
100 g | Blue cheese, Sunset blue |
Directions
- Any cut of Silver Ferns Farm beef will work - it needs to be one piece though - pop it in the freezer for 20 - 30 mins (this helps the next step) then slice REAL thin - as thin as you can. Pop it in a bowl - add the oil, salt and pepper and crushed garlic.
- Throw the sliced capsicums, brown onion and beef on a hot - oiled, fairly high heat, BBQ. Split the ciabatta down the middle and warm gently. Place the blue cheese in a pan on the BBQ to melt
- Assembly.... Take the warmed ciabatta and layer with mayonnaise - use your own discretion here. Layer own the grilled combo of beef capsicum and onion Then a light layer of fresh red onion. Drizzle over the melted blue cheese Top piece of ciabatta and you are good to go.....
- While this recipe is done on a BBQ - you can, of course grill everything in the kitchen, it's just such a gorgeous BBQ showstopper.
