Thanks to a large tree in my garden, pears are finding their way into all sorts of dishes including these yummy muffins that also include oat bran - which I try to incorporate where I can to help in lowering my cholesterol.
Ingredients
| 1 cup | Flour |
| 2 tsp | Baking powder |
| 1 tsp | Baking soda |
| 1 pinch | Salt |
| 2 cups | Oat bran (Main) |
| ½ cup | Sultanas |
| 2 | Pears, large and ripe, peeled and grated (Main) |
| 2 | Eggs |
| ½ cup | Milk |
| ½ cup | Yoghurt |
| ½ cup | Vegetable oil |
| ½ cup | Honey, warmed |
| 1 tsp | Vanilla paste |
Directions
- Heat oven to 190C fanbake. Mix flour, baking soda, baking powder and salt into a bowl and stir through oat bran, sultanas and pear (peeled if the skin is thick).
- Whisk eggs and add milk, yoghurt, oil, honey, and vanilla.
- Stir this mixture in to the dry ingredients until just combined.
- Spoon mixture into a greased muffin pan and bake for 20 minutes until golden.
