Its full of nutrients from different vegetables serve with Bunn/ Bread and gives special taste from North India.

1 | Capsicum, Dice in small pieces |
3 | Potatoes, Dice in pieces |
1 cup | Cauliflower, Dice in pieces (Main) |
2 Tbsp | Onions, paste |
1 tsp | Ginger, paste |
1 tin | Tomato puree, puree |
2 tsp | Salt, According to taste |
1 tsp | Red chilli, according to taste |
1 handful | Chopped fresh coriander |
1 tsp | Cumin seeds, to flaour |
1 tsp | Green cardamom, powder |
1 packet | Burger bun, round or flat |
1 cup | Water, For boiling vegetables |
2 Tbsp | Unsalted butter, For taste |
1 large | Lemon, To taste |
Directions
- Get Eggplant, carrorts, cauliflower, potatoes, capsicum and steam them in pressure cooker for 10 min with a cup of water and 1 tbs of salt. Now masshed the vegetables mixture thoroughly in the same pressure cooker with help of spatula or spoon.
- Heat butter in a pan on medium heat and add cumin seeds, cardamom powder, onion, ginger paste and stir them till it shows brown colour. Add tomatoo puree and stir for a 2 min. Add salt, red chilli powder and let them on low flame for 10 min. Add masheed vegetables now and keep on flame for 10 min. Add coriader (fresh) for garnishing. Your ''Bhaji'' is ready.
- Now take burger bun/ bread or any simple bunfrom super marker and cut them in halves. In a pan just heat them with butter and serve with 'Bhaji'. You can add lemon juice on Bhaji while serving or you can choose without lemon juice. It taste good when you heat bun when you want to eat and now precook them.
