This is a divine Indian recipe from Kolkatta, West Bengal. Perfect for ending up a spicy meal - light and delicious. A dear friend from Bengal made this for me and I fell in love with it.
Ingredients
| 100 g | Standard flour |
| 50 g | Rice flour |
| 1 tsp | Baking soda |
| 300 ml | Milk (Main) |
| 2 Tbsp | Rice bran oil |
| 100 g | Desiccated coconut |
| 150 ml | Condensed milk |
| 1 Tbsp | Chopped nuts |
| 1 Tbsp | Raisins |
| 5 Tbsp | Milk |
Directions
- Soak the rains in hot water and set aside. Mix white flour, rice flour, first measure of milk and baking soda in a bowl. Set aside. In a frying pan, heat the oil/ghee or butter and fry the coconut lightly. Add the chopped nuts, condensed milk, extra milk and drained soaked raisins and cook over a low heat until the milk and is absorbed.
- In a non stick pan, pour 2 Tbsp of the batter and lightly fry one side to make a pancake. Place t Tbsp of the coconut mixture on one end of the pancake and roll it over the filling. Repeat with remaining batter and filling. Serve with extra remaining filling on top.
