This is so simple, like a cheesecake without a crust.
Ingredients
| 250 g | Sour cream (Main) |
| 200 g | Cream cheese |
| 2 Tbsp | Passionfruit pulp |
| 1 cup | Icing sugar |
| 1 | Lemon, juiced |
| 1 to serve | Pawpaw |
| 1 to serve | Redcurrant jelly |
| 1 to serve | Strawberries, diced |
| 1 optional | Pomegranate seeds |
| 1 to garnish | Fresh mint |
Directions
- Whip together sour cream, cream cheese, cing sugar, passionfruit pulp and the juice of a lemon.
- Allow to firm in the fridge.
- Dice some fresh paw paw and mix it with a guava or redcurrant jelly, the spreadable kind, not jelly crystals.
- Pipe or shape the sour cream mix into a bowl to make a nest.
- Spoon in the paw paw, add some diced strawberries and, if you like, scatter with pomegranate seeds.
- Garnish with mint.
