¾ cup | Orange juice |
125 g | Margarine, dairy-free, melted |
1 ½ cups | Flour, or equal quantities of buckwheat, barley, rice or potato flour |
1 tsp | Baking powder, gluten-free if necessary |
1 tsp | Baking soda |
¾ cup | Sugar |
1 tsp | Xanthan gum |
¾ cup | Dates |

Directions
- Preheat the oven to 200 degC. Lightly grease a 12-muffin tin.
- Process the orange and juice in a food processor until well chopped.
- Add the margarine and mix.
- Sift the dry ingredients and add the dates.
- Combine the liquid and dry ingredients carefully.
- Spoon into the muffin tins and bake for about 15 minutes.
