- Heat oven to 160C fan bake and line two baking trays with non-stick baking paper. Place the butter and sugars in a bowl and beat until pale and creamy. Beat in egg and vanilla essence.
- Add flour, baking soda, salt, rolled oats and chocolate chips and mix well to combine.
- Drop rounded tablespoonfuls onto prepared trays and bake for 12 to 15 minutes, depending on desired texture (see Tip below).
- Transfer to a wire rack to cool. Will last for up to a week, stored in an airtight container.
Tip: Cook biscuits for 12 minutes if you want a chewy texture or 15 minutes if you prefer crispy biscuits.
