I made it up as my daughter and I were on a bit of a health kick and wanted to still enjoy good food but wanted a few less carbohydrates
Ingredients
1 medium | Courgette |
1 medium | Pumpkin |
1 medium | Parsnip |
1 medium | Onion |
1 medium | Kumara |
1 medium | Carrot |
2 medium | Chicken breasts (Main) |
2 Tbsp | Flour |
2 Tbsp | Butter |
2 cups | Milk |
Directions
- Use courgettes,pumpkin,onions,kumara,carrots and parsnips or any other vegetables you like slice all vegetables quite thinly.
- Poach 2 chicken breasts and slice these thinly also then just start to layer vegetables then a layer of chicken then some cheese sauce then more layers of vegetable and chicken and cheese sauce until all vegetables chicken and sauce have been used up top with some grated Parmesan and bake in the oven for 40 mins until bubbling and serve with a lovely crisp salad and a lovely glass of chilled Brancott Estate Chardonnay Yumo!
