Ingredients
| 1 tsp | Sea salt |
| 5 | Dried chillies, chopped and soaked |
| 1 Tbsp | Galangal, finely sliced |
| 3 Tbsp | Shallots, finely chopped |
| 1 tsp | Shrimp paste |
| 8 | Garlic cloves, 5 whole, 3 chopped |
| 75 g | Pork mince (Main) |
| 1 handful | Fresh coriander, chopped |
| 1 cup | Tomato, sliced |
| 2 Tbsp | Cooking oil |
| 3 Tbsp | Water |
| 2 Tbsp | Sugar |
Directions
- In a small food processor bowl, blitz the chillies, shallots, galangal, salt, garlic and shrimp paste.
- Tip out into a glass mixing bowl, work in the pork mince and coriander.
- In a wok, heat the cooking oil. cook the 3 cloves garlic, peeled and chopped. Add the pork mixture, then add 3 tbsp water and 2 tbsp sugar.
- Stir occasionally for five minutes, add the tomatoes, continue to cook for 10 minutes.
- Remove from the heat and transfer to a bowl to cool.
