- Beat eggs until light and fluffy.
- Mix in combined flour and baking powder along with milk, salt, pepper, mussels, coriander leaves and red onion.
- Heat butter in a frying pan and cook large spoonfuls of batter in batches until golden on both sides.
- Serve with sweet chilli sauce.
