My mums memory comes alive with the aroma and taste of the meatloaf I had as a child. I love to cook the familiar dish for the next generation in our family (my children) as they just love it - even though it has vegetables! I hope to give eachchild a recipe book when they leave home with Mum's Mega Meatloaf and other family favourites.
Ingredients
1 kg
Beef mince (Main)
1 packet
Sausage meat
1 large
Onion, chopped finely
1 cup
Mixed vegetables, Cooked
1 large
Carrot, Grated
1 cup
Breadcrumbs
1
Salt, To taste
1
Pepper, To taste
2 cubes
Beef stock, crumbled OXO
4 Tbsp
Tomato sauce
3 Tbsp
Worcestershire sauce

Eggs, without shells!
Directions
Turn Oven on 190 degrees
Mix all ingredients by hand in a oven proof dish / casserole dish.
Cook for45min-1hour or until meat juices run clear and meatloaf has shrunk away from sides of dish.
Leave to cool before slicing. Serve with mash potatoe & garnish :)
