Bite's youngest contributor, Bianca Rocca bakes these oaty morning cookies to have on the run.
|1 ½ cups||Rolled oats (Main)|
|1 cup||Shredded coconut|
|¾ cup||Almonds, coarsely chopped|
|¾ cup||Dried apricots, coarsely chopped|
|3||Bananas, ripe, mashed|
|1 Tbsp||Coconut oil, warmed|
|1 tsp||Vanilla extract|

- Heat oven to 180C. Combine oats, coconut, salt, almonds and apricots. Stir in bananas, oil, honey and vanilla.
- Mold two tablespoons of mixture into balls. Continue with remaining mixture.
- Bake for approx 10 minutes, or until golden on top.
