Bite's youngest contributor, Bianca Rocca bakes these oaty morning cookies to have on the run.
Ingredients
| 1 ½ cups | Rolled oats (Main) |
| 1 cup | Shredded coconut |
| 1 pinch | Salt |
| ¾ cup | Almonds, coarsely chopped |
| ¾ cup | Dried apricots, coarsely chopped |
| 3 | Bananas, ripe, mashed |
| 1 Tbsp | Coconut oil, warmed |
| 1 Tbsp | Honey |
| 1 tsp | Vanilla extract |
Directions
- Heat oven to 180C. Combine oats, coconut, salt, almonds and apricots. Stir in bananas, oil, honey and vanilla.
- Mold two tablespoons of mixture into balls. Continue with remaining mixture.
- Bake for approx 10 minutes, or until golden on top.
