Ingredients
⅓ cup | Walnuts, use up to ½ cup (Main) |
2 cups | Mint leaves, packed, use a mix of mint and parsley leaves (Main) |
2 cloves | Garlic, use up to 3 cloves, optional |
1 | Lemon, zest and juice; alternatively use the zest and juice of ½ orange (Main) |
¼ cup | Walnut oil, use enough to bind pesto (Main) |
¼ cup | Grated parmesan cheese |
Directions
- Toast walnuts until fragrant, sprinkle with sea salt and cool.
- Blitz with 2 packed cups of fresh mint and parsley leaves, the crushed garlic if using, the lemon or orange zest and juice and enough walnut oil to bind. Add the parmesan and blitz to incorporate.
