Sausages are a great addition to this pasta in sumac cream sauce.
Merguez sausage pasta
| 1 packet | Ribbon pasta |
| 1 packet | Merguez sausage (Main) |
| 1 bunch | Choy sum |
| 1 handful | Mint leaves, chopped |
Sumac cream sauce
| ½ cup | Yoghurt |
| 1 | Lemon, zest and juice |
| 1 clove | Garlic, crushed |
| ½ Tbsp | Sumac powder |
| 1 Tbsp | Olive oil |
| 1 to taste | Salt and freshly ground black pepper |
Directions
- Cook some ribbon pasta and roast some merguez sausages.
- Slice the sausages and toss them through the hot pasta with chopped choy sum leaves and some mint leaves.
- Stir through enough sumac cream sauce (see recipe below)to taste.
