Keeping lunchboxes interesting and healthy is a constant challenge. Having some new recipes on hand can encourage kids to actually eat their lunch and also get the nutrition they need for a busy day at school.
|½ cup||Breadcrumbs, fresh|
|1||Onion, small, finely chopped|
|250 g||Beef mince|
|2 Tbsp||Tomato sauce|
|2 Tbsp||Olive oil|
|4||Cos lettuce leaves|
|6||Cherry tomatoes, halved|
|½||Cucumbers, roughly chopped|
|¼ cup||Aioli, or mayonnaise|

- Mix together breadcrumbs, onion, mince, beaten egg and tomato sauce. Season with salt.
- Roll mince mixture into walnut-sized balls
- Heat oil in a frying pan and cook meatballs until golden and cooked through. Allow to cool to room temperature.
- Place meatballs, lettuce, tomatoes and roughly chopped cucumber on each tortilla wrap. Dot with mayonnaise or aioli and then roll the tortilla into a log or cone shape. Hold roll in place by wrapping securely with lunchwrap.
