Remember when marinated mushrooms were a thing? Here’s a yum char-inspired version of the 1980s classic.
Ingredients
| 1 clove | Garlic, peeled and crushed to a paste with ½ tsp flaky sea salt | 
| 1 small | Red chilli, finely chopped (Main) | 
| 3 Tbsp | Chinkiang black vinegar (Main) | 
| 1 Tbsp | Sesame oil | 
| 2 Tbsp | Olive oil | 
| 200 g | White button mushrooms, halved (Main) | 
| ½ cup | Walnut halves (Main) | 
| 2 | Spring onions, finely chopped | 
Directions
- Put the crushed garlic, chilli, black vinegar and oil in a bowl. Whisk to combine, then add the mushrooms. Stir, cover and let stand for 30 minutes.
 - Just before serving, add the walnuts and spring onions. Stir gently and serve.
